Loaded Baked Potato with Steak Bites: The Ultimate Comfort Meal

Preheat your oven to 400°F (200°C).
Scrub the potatoes clean and pat them dry with a towel. Rub each potato with olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the potatoes. Remove them from the oven and set aside to cool slightly.
Cook the Steak Bites:

While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
Season the steak cubes with garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
Once the oil is hot, add the steak cubes to the skillet in a single layer. Cook for 3-4 minutes, turning the steak bites occasionally, until they are browned and cooked to your preferred level of doneness. Remove from heat and set aside.
Assemble the Loaded Potatoes:

Once the baked potatoes are done, make a slit down the center of each one and gently squeeze the ends to open them up.
Fluff the inside of the potatoes with a fork, then top each with butter, shredded cheddar cheese, sour cream, crumbled bacon, and chopped green onions.
Spoon the cooked steak bites on top of each potato.
Serve:

Serve the loaded baked potatoes with steak bites immediately while they’re warm and melty.
