Lemon Meltaways Recipe

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy (about 2-3 minutes).
Add the lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until well combined.
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Step 2: Shape the Cookies
Scoop tablespoon-sized portions of dough and roll them into balls. Arrange them on the prepared baking sheet, spacing them about 1 inch apart.
Gently press each dough ball down slightly with the back of a spoon or your fingers to form small discs.
Step 3: Bake the Cookies
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just beginning to turn golden.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes.
Step 4: Coat with Powdered Sugar
While the cookies are still warm, roll them in the powdered sugar until fully coated. Alternatively, you can dust the powdered sugar over the cookies once they have completely cooled.
