Lemon Ginger Chicken with Pineapple Mango Salsa & Coconut Rice

In a bowl, whisk together ginger, lemon zest, lemon juice, honey, soy sauce, and olive oil.
Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
Heat a skillet over medium heat and cook the chicken for 5-7 minutes, stirring occasionally, until fully cooked and slightly caramelized.
Step 2: Prepare the Coconut Rice
Rinse the rice under cold water until the water runs clear.
In a pot, combine rice, coconut milk, water, and salt. Bring to a boil.
Reduce heat to low, cover, and simmer for 12-15 minutes, or until the liquid is absorbed.
Fluff with a fork before serving.
Step 3: Make the Pineapple Mango Salsa
In a bowl, mix pineapple, mango, red onion, and lime juice.
Stir in chopped cilantro (if using) and season with salt and pepper.
Step 4: Prepare the Spicy Mayo
Whisk together mayonnaise, sriracha, and lime juice until smooth.
Step 5: Assemble the Dish
Spoon coconut rice onto a plate.
Top with lemon ginger chicken.
Add a generous scoop of pineapple mango salsa.
Drizzle with spicy mayo for extra flavor.
