If you’re using onions, sauté the finely chopped onion in a small pan with a little oil or butter over medium heat until soft and translucent, about 2-3 minutes.
Add the ham to the pan and cook for an additional 2 minutes, allowing the ham to heat through. If you’re skipping the onion, just warm the ham in the pan.
Assemble the Wrap:
Lay the lavash flat on a clean surface.
In the center of the lavash, layer the ham, sautéed onions (if using), grated cheese, and sliced cherry tomatoes.
Fold and Cook:
Carefully fold the sides of the lavash over the filling, then roll it up tightly into a wrap.
If desired, heat a small amount of olive oil or butter in a pan over medium heat. Place the wrap seam-side down and cook for about 2-3 minutes per side, or until the lavash is golden and the cheese has melted.
Serve:
Remove the wrap from the pan and slice it in half. Serve hot and enjoy!
