Cook the lasagna noodles according to package instructions. Drain and set aside, laying them flat on parchment paper or a clean kitchen towel to prevent them from sticking.
Cook the meat:
In a large skillet, cook the ground beef (or turkey) over medium heat until browned, breaking it up as it cooks. Drain any excess fat, then stir in the marinara sauce, garlic powder, oregano, salt, and pepper. Simmer for 10 minutes to allow the flavors to combine, then set aside.
Prepare the cheese mixture:
In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated parmesan, beaten egg, and fresh parsley. Stir until smooth and well-mixed.
Assemble the rolls:
Preheat your oven to 375°F (190°C).
Lay out the cooked lasagna noodles and spread a generous spoonful of the cheese mixture along each noodle. Top with a small amount of the meat sauce. Carefully roll up each noodle and place it seam side down in a greased baking dish.
Bake the lasagna rolls:
Once all the rolls are in the baking dish, pour the remaining meat sauce over the top of the rolls. Sprinkle with the remaining mozzarella cheese.
Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and let the rolls cool for a few minutes. Garnish with fresh basil, if desired, and serve hot.
