Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime zest, and key lime juice.
Alternate adding the dry ingredients and the buttermilk, mixing until just combined.
Fill the cupcake liners about ¾ full with batter. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool completely on a wire rack.
2️⃣ Make the Creamy Lime Frosting:
Beat the cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, mixing until light and fluffy.
Stir in the key lime juice, key lime zest, and vanilla extract until fully combined.
3️⃣ Fill & Frost the Cupcakes:
Using a cupcake corer or a small knife, cut a hole in the center of each cupcake.
Pipe or spoon a generous amount of the creamy lime frosting into the hole.
Frost the tops of the cupcakes with the remaining frosting using a piping bag or spatula.
Garnish with extra lime zest or a small slice of key lime for decoration.
