Key Lime Cheesecake Parfaits

In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand. Spoon the crust mixture into the bottom of individual jars, cups, or parfait glasses. Press gently to compact it. Chill in the refrigerator while you make the cheesecake filling.

Make the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and lime juice. Mix until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Add lime zest if desired for an extra burst of lime flavor.

Assemble the Parfaits:
Spoon the cheesecake filling on top of the chilled graham cracker crust. Layer as much or as little as you like, depending on your preference and the size of your serving containers.

Chill:
Refrigerate the parfaits for at least 4 hours, or overnight for the best flavor and texture. This will help the filling set and meld the flavors.

Before serving, top each parfait with a dollop of whipped cream, a slice of lime, and crumbled graham crackers for crunch. Optional: Add a sprinkle of extra lime zest for more vibrant flavor.
