Keto Ground Beef Casserole: A Delicious, Low-Carb Comfort Meal

In a large skillet, brown the ground beef over medium heat. Add the diced onion, green and red peppers, and garlic. Cook until the beef is fully browned and the vegetables have softened, about 7-10 minutes. Drain any excess fat.

Add Spices and Cream Cheese:

Stir in the salt, pepper, oregano, Italian seasoning, parsley, and paprika. Then, add the cream cheese, allowing it to melt into the mixture. Stir until everything is combined and creamy.

Cook the Cauliflower Rice:

While the beef mixture is cooking, prepare the cauliflower rice according to the package instructions. This can be done in a separate skillet or microwave. Once cooked, add the cauliflower rice to the beef mixture and stir until everything is evenly distributed.

Assemble the Casserole:

Preheat your oven to 375°F (190°C). Transfer the beef and cauliflower rice mixture to a greased 9×13-inch baking dish. Sprinkle the shredded Colby Jack, mozzarella, and grated Parmesan cheeses evenly on top.

Bake:

Place the casserole in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serve:

Once baked, let the casserole sit for a few minutes before serving. This dish is perfect on its own or paired with a fresh salad or roasted vegetables.
