Preheat your oven to 375°F (190°C). Transfer the beef and cauliflower rice mixture to a greased 9×13-inch baking dish. Sprinkle the shredded Colby Jack, mozzarella, and grated Parmesan cheeses evenly on top.
Bake:
Place the casserole in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
Serve:
Once baked, let the casserole sit for a few minutes before serving. This dish is perfect on its own or paired with a fresh salad or roasted vegetables.
