Jalapeño Peach Chicken: A Sweet and Spicy Delight!

Season the chicken breasts with salt, pepper, cumin, and smoked paprika. Set aside to let the flavors absorb.
Step 2: Sauté the Jalapeños and Garlic
In a large skillet, heat olive oil over medium heat.
Add the finely chopped jalapeños and minced garlic. Sauté for about 2-3 minutes until softened and fragrant.
Step 3: Add Peaches and Simmer
Add the chopped peaches (or peach preserves) to the skillet. Stir to combine with the jalapeños and garlic.
If using fresh peaches, let the mixture cook for about 5 minutes, allowing the peaches to break down and become syrupy. If using preserves, simmer for 2-3 minutes.
Step 4: Cook the Chicken
In a separate pan, heat a bit more olive oil over medium-high heat.
Add the seasoned chicken breasts to the pan and cook for about 6-7 minutes per side, or until the chicken is golden brown and cooked through.
Step 5: Combine Chicken and Sauce
Once the chicken is cooked, pour the peach and jalapeño mixture over the chicken.
Let the chicken simmer in the sauce for 2-3 minutes, allowing the flavors to meld together.
Step 6: Serve
Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of freshness.
