Italian Sausage and Peppers Sandwiches

In a large skillet over medium heat, add olive oil and cook the Italian sausage links for 8-10 minutes, turning occasionally, until browned and cooked through. Remove the sausages from the skillet and set them aside.

Sauté the Vegetables:
In the same skillet, add more olive oil if needed, and sauté the sliced onions and bell peppers for 5-7 minutes until they become softened. Add the minced garlic, salt, pepper, oregano, and basil. Cook for an additional 2 minutes until fragrant.

Combine and Finish:
Slice the cooked sausage links lengthwise (optional) for easier eating and return them to the skillet with the peppers and onions. Stir everything together and heat through for a couple of minutes.

Assemble the Sandwiches:
Place a sausage link in each sandwich roll or hoagie bun. Top with the sautéed peppers and onions, and add a slice of provolone or mozzarella cheese if desired. Place the sandwiches under the broiler for 1-2 minutes to melt the cheese (optional).
