Irresistible Sweet Potato Pie: A Classic Comfort Dessert

Preheat your oven to 350°F (175°C). Roll out the pie crust and fit it into a 9-inch pie pan. Trim and crimp the edges as desired. Set aside.
Make the Sweet Potato Filling:

In a large mixing bowl, beat the mashed sweet potatoes and butter until smooth and creamy.
Add the coconut sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
Assemble the Pie:

Pour the filling into the prepared crust, spreading it evenly.
Bake:

Place the pie on the middle rack of the oven and bake for 50–60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
Allow the pie to cool at room temperature for at least 2 hours before slicing.
