Heat a drizzle of olive oil in a skillet over medium heat.
Add the diced onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant.
Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Season with salt, black pepper, and paprika to taste.
Cook until the beef is fully browned and cooked through, about 5-6 minutes.
Assemble the Tortillas:
Lay the tortillas flat on a clean surface.
Spoon the cooked ground beef mixture evenly over each tortilla.
Sprinkle a generous amount of shredded mozzarella cheese on top of the beef.
Toast the Tortillas:
Heat a clean skillet over medium heat. Place one tortilla in the skillet and cook for about 2-3 minutes until the bottom is crispy and golden brown.
Flip the tortilla and cook for another 1-2 minutes, just until the cheese has melted.
Finish and Serve:
Remove the tortilla from the skillet and sprinkle with finely chopped parsley or green onion for a fresh finish.
Repeat the process for the second tortilla.
Slice into wedges and serve hot!
