Prepare the Potatoes
Begin by washing the potatoes thoroughly to remove any dirt. You can peel them if you prefer, but leaving the skins on adds extra crunch and nutrients. Slice the potatoes thinly using a mandolin or sharp knife, aiming for uniform thickness (about 1/8 inch thick).
Soak the Potato Slices
Place the potato slices in a large bowl of cold water and soak for at least 30 minutes. This step is crucial because it helps remove excess starch, which can make the chips soggy instead of crispy. After soaking, drain and pat the slices dry with a clean towel or paper towels to remove as much moisture as possible.
Season the Chips
Lay the potato slices out in a single layer on a baking sheet lined with parchment paper. Make sure the slices are not overlapping to ensure even cooking. Season the chips with salt, and if you like, sprinkle them with other seasonings such as garlic powder, paprika, or onion powder for added flavor.
Bake the Chips
Preheat your oven to 400°F (200°C). Place the baking sheet with the potato slices in the oven. Bake for 25-35 minutes, turning the chips halfway through to ensure even crisping. Keep a close eye on them in the last few minutes to avoid burning. The chips are done when they are golden brown and crispy.
Cool and Serve
Once the chips are done, remove them from the oven and let them cool for a few minutes on the baking sheet. This helps them crisp up even further as they cool. Serve immediately, or store in an airtight container to keep them fresh.
