Honey Mustard Chicken with Roasted Asparagus and Cheese

In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, salt, and pepper until well combined.

2️⃣ Marinate the Chicken:
Place the chicken breasts in a resealable plastic bag or shallow dish.

Pour half of the honey mustard sauce over the chicken and toss to coat.

Let the chicken marinate for at least 15 minutes, or up to 1 hour in the fridge.

3️⃣ Preheat the Oven:
Preheat your oven to 400°F (200°C).

4️⃣ Prepare the Asparagus:
On a baking sheet, place the trimmed asparagus.

Drizzle with olive oil and season with salt and pepper.

Toss to coat evenly.

5️⃣ Bake the Chicken and Asparagus:
Remove the chicken from the marinade (discard the used marinade) and place the chicken breasts on the same baking sheet with the asparagus.

Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender.

6️⃣ Add Cheese:
In the last 5 minutes of baking, sprinkle the shredded mozzarella cheese over the chicken breasts.

Continue baking until the cheese is melted and bubbly.

7️⃣ Serve:
