Honey Lime Chicken and Avocado Rice Stack

Rinse the rice under cold water until the water runs clear.
In a large saucepan, bring the chicken broth to a boil. Add the rice, soy sauce, sesame oil, and garlic powder. Stir, then reduce the heat to low. Cover the saucepan and let the rice simmer for 15-20 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and fluff with a fork.
Prepare the Chicken:

In a bowl, mix the honey, lime juice, and grated ginger to create a marinade.
Add the thinly sliced chicken to the bowl and coat it with the marinade. Let it sit for 10 minutes to absorb the flavors.
Heat a large skillet over medium heat and add a bit of oil. Cook the marinated chicken slices for 6-8 minutes, flipping occasionally, until the chicken is cooked through and lightly browned.
Assemble the Stack:

Place a scoop of the cooked rice on each plate as the base.
Top the rice with a layer of the cooked honey lime chicken.
Garnish with sliced avocado on top.
Serve:

Serve immediately, optionally garnishing with fresh cilantro or a squeeze of extra lime juice.
