In a large pot, add the peeled and chopped potatoes. Cover with cold water and bring to a boil over medium-high heat.

Add the honey, soy sauce, Dijon mustard (if using), apple cider vinegar, and fresh herbs (if using). Stir to combine and simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Return the pork chops to the skillet and spoon the sauce over the top. Let them cook for an additional 1-2 minutes, allowing the flavors to meld.
Step 4: Serve
Plate the pork chops alongside the creamy mashed potatoes.
Drizzle extra honey garlic sauce over the pork chops and mashed potatoes for added flavor. Garnish with fresh thyme or rosemary if desired.
