Honey chicken

Season the chicken breasts with salt and pepper on both sides. You can also lightly score the chicken with a knife to help the sauce penetrate better.
2. Make the Honey Sauce:

In a small bowl, whisk together the honey, soy sauce, olive oil, garlic, Dijon mustard (if using), and apple cider vinegar (or lemon juice). Set aside.
3. Cook the Chicken:

Heat a large skillet over medium-high heat. Add a small amount of oil and cook the chicken breasts for 6-7 minutes per side, or until fully cooked through and golden brown. The internal temperature should reach 165°F (74°C).
4. Add the Sauce:

Once the chicken is cooked, reduce the heat to medium and pour the honey sauce over the chicken. Let the sauce simmer for 2-3 minutes, spooning it over the chicken to coat it evenly. The sauce will thicken and become slightly caramelized.
5. Serve:

Once the sauce is thickened and the chicken is nicely coated, remove from heat. Serve the honey chicken with your favorite side dishes, garnishing with fresh parsley if desired.
