Honey Bacon Roasted Potatoes: A Sweet and Savory Delight

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
Cook the Bacon:

In a large skillet, cook the chopped bacon over medium heat until crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain any excess grease. Reserve a tablespoon of the bacon drippings for flavoring the potatoes.
Prepare the Potatoes:

In a large bowl, toss the cubed potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Add the reserved bacon drippings for extra flavor.
Add the Honey:

Drizzle the honey over the seasoned potatoes and toss everything together until the potatoes are evenly coated in the honey mixture.
Roast the Potatoes:

Spread the honey-coated potatoes evenly on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through, until golden brown and crispy on the edges. The potatoes should be tender on the inside when pierced with a fork.
Finish with Bacon:

In the last 5 minutes of roasting, sprinkle the crispy bacon pieces over the potatoes and continue roasting to allow the bacon to heat through and crisp up even more.
Serve:

Once the potatoes are done, remove them from the oven and garnish with fresh parsley, if desired. Serve warm and enjoy this sweet and savory treat!
