Homemade Reuben Bake – A Delicious Twist on a Classic Favorite

Preheat the oven to 350°F (175°C). In a large mixing bowl, toss the cubed rye bread with melted butter, ensuring the bread is evenly coated. Spread the buttered bread cubes in the bottom of a greased 9×13-inch baking dish.

Prepare the Filling:
In a separate bowl, combine the corned beef, sauerkraut, shredded Swiss cheese, Thousand Island dressing, parsley, and caraway seeds (if using). Stir until well combined.

Assemble the Bake:
Spoon the filling mixture over the buttered rye bread cubes, spreading it out evenly.

Bake:
Cover the baking dish with foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the top is lightly browned.

Serve:
Remove from the oven and let it cool for a few minutes before serving. Garnish with extra parsley, if desired.
