Wash and chop the fresh fruit into small pieces. If you’re using berries like strawberries or blueberries, just rinse them well. For larger fruits like mango or peaches, peel and chop them into small chunks.
Blend the Ingredients:
In a blender, combine the chopped fruit, coconut milk, honey or maple syrup, and vanilla extract (if using). Blend until smooth and creamy. If you prefer chunks of fruit in your popsicles, pulse the blender a few times to leave some fruit pieces intact.
Pour the Mixture into Molds:
Pour the blended mixture evenly into popsicle molds. If you don’t have molds, you can use small cups or an ice cube tray. Insert wooden sticks or plastic handles into each mold.
Freeze the Popsicles:
Place the molds in the freezer and let them freeze for at least 4 hours or until fully set. For faster freezing, you can leave them overnight.
Serve:
Once frozen, remove the popsicles from the molds by gently running warm water on the outside of the molds or letting them sit at room temperature for a couple of minutes. Enjoy your homemade popsicles immediately!
