Homemade Mustard

Soak the Mustard Seeds:
Place the mustard seeds in a bowl and cover them with about 1/4 cup of water. Let them soak for about 4 hours or overnight. This softens the seeds and makes them easier to blend.

Blend the Mustard Seeds:
After soaking, drain the mustard seeds and place them in a blender or food processor. Add the apple cider vinegar, 1/4 cup of water, salt, turmeric, and any optional seasonings like honey, garlic powder, or ground mustard. Blend the mixture until you reach your desired consistency. For a smoother mustard, blend longer; for a grainier mustard, pulse less.

Adjust the Flavor:
Taste your mustard and adjust the seasoning if needed. Add more honey for sweetness, vinegar for tang, or salt for a sharper flavor. If you prefer a spicier mustard, you can add more mustard seeds or a dash of cayenne pepper.

Let it Rest:
Transfer the mustard to a jar or airtight container. Let it sit for at least 24 hours in the refrigerator to allow the flavors to develop and meld together. The mustard will mellow and become more flavorful over time.
