Preheat your oven to 375°F (190°C) if cooking in the oven, or prepare your grill or campfire.
Slice the potatoes, carrots, and onion into thin slices for quicker cooking.
If using ground beef, form it into 4 small patties or crumble it up. Alternatively, you can use other proteins of your choice, such as sliced sausage or chicken breasts.
Step 2: Assemble the Foil Packets
Lay out 4 large sheets of aluminum foil, one for each serving.
Drizzle a little olive oil on the center of each sheet of foil.
Place a portion of sliced potatoes in the center of each foil sheet, followed by sliced carrots, onion, and green beans.
Top with the ground beef patties (or other proteins) and sprinkle with minced garlic, dried thyme, paprika, salt, and pepper.
Drizzle a little more olive oil over the top for added moisture and flavor.
Step 3: Seal the Foil Packets
Fold the sides of the foil over the ingredients and crimp the edges to seal tightly, making sure the packet is well-closed so the steam stays inside.
Repeat with the remaining packets.
Step 4: Cook the Hobo Dinners
Oven: Place the foil packets on a baking sheet and bake for 30-40 minutes, or until the vegetables are tender and the protein is cooked through.
Grill: Place the packets on the grill over medium heat and cook for 25-30 minutes, flipping halfway through.
Campfire: Place the foil packets over hot coals and cook for about 20-30 minutes, flipping occasionally to ensure even cooking.
Step 5: Serve
Carefully open the foil packets (watch out for steam!) and serve the hobo dinners hot, straight from the foil.
