High Protein-Low Carb Pancakes

In a blender or bowl, combine the cottage cheese, eggs, vanilla extract, and optional honey/maple syrup. Blend or whisk until smooth.

2️⃣ Add the Dry Ingredients:

Stir in the flour, cinnamon, baking powder, and salt. Mix until everything is well incorporated and smooth.

3️⃣ Cook the Pancakes:

Heat a non-stick skillet over medium heat and lightly grease with oil or butter.

Pour small amounts of the batter into the skillet, cooking a few pancakes at a time.

Cook for 2-3 minutes on each side, or until golden brown and cooked through. Flip carefully with a spatula.

Stack the pancakes and top with your favorite toppings like fresh berries, yogurt, or a drizzle of extra honey/maple syrup.
