High-Protein Chicken Burrito Bowl

In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, black pepper, smoked paprika, and lime juice.

Coat the chicken breasts evenly with the spice mix and marinate for 10 minutes.

Heat a grill pan or skillet over medium heat and cook the chicken for 5-7 minutes per side until golden brown and fully cooked. Let the chicken rest for 5 minutes, then chop it into bite-sized pieces.

Prepare the Guacamole & Pico de Gallo:

For the guacamole: In a bowl, mash the avocado with lime juice, salt, and cilantro.

For the pico de gallo: Combine chopped tomatoes, red onion, cilantro, lime juice, and salt in a separate bowl.

Assemble the Bowl:

Start with a base of chopped romaine lettuce.

Add the grilled chicken, black beans, corn, guacamole, and pico de gallo in separate sections.

Serve & Enjoy!
