1 onion, chopped

Olive oil (for frying)

1 carrot, diced

1 celery stalk, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 zucchini, chopped

1 cup green beans, chopped

1 can (14.5 oz) diced tomatoes

4 cups vegetable broth (or chicken broth)

1 tsp dried thyme

1 tsp dried oregano
