Peel and chop onions and garlic. Heat a couple of tablespoons of sunflower oil in a large pot over medium heat.
Add the onions and sauté until softened and fragrant, about 5 minutes.
Add the leek, sliced, and garlic. Sauté for another 2 minutes.
Step 2: Add the Vegetables
Peel and chop the carrot, and zucchinis. Cut the broccoli into florets. Add all the vegetables to the pot and stir to combine.
Step 3: Cook the Soup
Add vegetable broth to the pot along with a bay leaf (optional). Bring to a boil, then reduce to a simmer.
Let the soup simmer for about 20-25 minutes, or until all the vegetables are tender.
Step 4: Season and Serve
Season with salt and pepper to taste.
Remove the bay leaf (if used) and serve the soup hot. You can blend part of the soup for a creamier texture or leave it chunky.
