In a large soup pot, heat the olive oil over medium-high heat.
Add the pork ribs and brown them on all sides. This should take about 5-7 minutes. Once browned, remove the ribs and set them aside.
Step 2: Sauté the Vegetables
In the same pot, add the diced onion and sauté for about 3 minutes, or until softened.
Add the minced garlic and cook for another 1 minute, until fragrant.
Step 3: Build the Soup
Return the browned pork ribs to the pot and add the chicken broth. Stir to combine.
Add the sliced mushrooms, diced potatoes, sliced carrots, corn, thyme, black pepper, and bay leaves to the pot. Bring the soup to a boil.
Step 4: Simmer the Soup
Once the soup reaches a boil, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours. This will allow the pork ribs to become tender and the flavors to meld together.
Stir occasionally and add more broth if the soup becomes too thick during simmering.
Step 5: Season and Serve
After the pork is tender and the vegetables are cooked through, remove the bay leaves.
Taste the soup and adjust the seasoning with salt and pepper if necessary.
Ladle the soup into bowls and garnish with freshly chopped parsley before serving.
