Hearty Chicken and Vegetable Stew

Aromatic Stir-Fry:
In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until tender, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add Veggies and Broth:
Add the sliced carrots, cubed potatoes, chicken broth, and water. Stir in the tomato paste, thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.

Add Chicken and Peas:
