Hearty Amish Comfort Casserole: A Warm, Filling Family Favorite

Cook the beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks.
Add onions and garlic: Once the beef is browned, add the diced onions and minced garlic. Cook for 3-4 minutes until the onions are soft and translucent. Drain any excess fat from the skillet and set the beef mixture aside.
Step 2: Prepare the Casserole Mix
Make the creamy sauce: In a mixing bowl, combine the sour cream, milk, cream of mushroom soup, salt, pepper, paprika, and thyme. Stir well to blend.
Layer the casserole: In a greased 9×13-inch baking dish, layer the sliced potatoes evenly across the bottom. Then, spread half of the beef mixture over the potatoes. Pour half of the creamy sauce over the beef layer. Repeat with another layer of potatoes, beef, and sauce.
Step 3: Bake the Casserole
Add cheese and bake: Top the casserole with shredded cheddar cheese. Cover with foil and bake at 375°F (190°C) for 45 minutes. After 45 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Step 4: Serve
Serve: Let the casserole cool for 5-10 minutes before slicing. Garnish with fresh parsley if desired and serve hot.
