Healthy and SO Delicious! Eat More of These Vegetables This Winter!

Slice the zucchinis into thin rounds and pat them dry with paper towels to remove excess moisture.

Cook the Onion:

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until softened and translucent.

Cook the Zucchini:

Add the sliced zucchini to the skillet with the onion. Cook for about 5-7 minutes, stirring occasionally, until the zucchini softens and releases some of its moisture. Season with salt and black pepper to taste.

Combine Ingredients:

Reduce the heat to low. Stir in the Greek yogurt (or sour cream), 1/2 cup of cheddar cheese, and 1/4 cup of breadcrumbs. Mix until everything is well combined and the cheese is melted.

Top and Bake:

Preheat the oven to 375°F (190°C).

Transfer the zucchini mixture into a baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese and the rest of the breadcrumbs over the top.

Bake:

Bake the dish for 20-25 minutes or until the top is golden and crispy.

Serve:

Let the dish cool slightly before serving. It pairs wonderfully with a side of lean protein or a fresh salad.
