In a large skillet, heat the olive oil over medium heat. Add the ground beef and diced onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease if necessary.
Add the Seasonings:
Stir in the garlic powder, onion powder, oregano, salt, and pepper. Mix well to coat the beef evenly with the seasonings.
Combine the Ingredients:
Preheat your oven to 375°F (190°C). In a large casserole dish, combine the cooked beef mixture, uncooked rice, diced tomatoes (with juice), tomato sauce, and beef broth. Stir everything together until well mixed.
Bake the Casserole:
Cover the casserole dish with aluminum foil and bake for 35-40 minutes. After this time, check the rice to make sure it’s tender and fully cooked. If necessary, bake for an additional 5-10 minutes, checking periodically.
Add Cheese:
Once the rice is tender and the casserole is bubbling, remove the foil. Sprinkle the shredded cheddar cheese over the top of the casserole. Return it to the oven and bake uncovered for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serve:
Let the casserole sit for 5 minutes before serving. This allows the flavors to settle and makes it easier to serve.
