Preheat your oven to 375°F (190°C). Trim any excess fat from the turkey loin and gently butterfly it by slicing it horizontally to create an even flat surface. Use a meat mallet to pound it to an even thickness if needed, making it easier to roll.
Cook the Beef Bacon:
In a large skillet, cook the chopped beef bacon over medium heat until crispy. Once cooked, remove the bacon and set it aside. Leave about 1 tablespoon of bacon fat in the skillet.
Prepare the Stuffing:
In the same skillet, add the olive oil and sauté the chopped onion and garlic over medium heat until softened and fragrant, about 3-4 minutes. Add the diced apple and cook for an additional 2-3 minutes until the apple softens slightly.
Add the cooked beef bacon back into the skillet along with the breadcrumbs, cinnamon, salt, and pepper. Stir to combine, then add the chicken broth. Let it cook for another 1-2 minutes, allowing the mixture to absorb the broth. Remove from heat and stir in the chopped parsley.
Stuff the Turkey Loin:
Lay the butterflied turkey loin flat on a cutting board. Spread the apple and beef bacon stuffing evenly over the entire surface of the turkey. Carefully roll the turkey loin up, securing the stuffing inside. Use kitchen twine to tie the roll in several places, ensuring it holds together.
Roast the Turkey Loin Roll:
In the same skillet, melt the butter over medium-high heat. Brown the turkey roll on all sides, about 2-3 minutes per side. Once browned, transfer the turkey loin to a baking dish and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
Serve:
Once the turkey is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing. Serve the turkey slices with any remaining stuffing and your favorite side dishes.
