Heat ½ tablespoon of oil in a skillet over medium-high heat. Add the ground chicken and sauté until almost fully cooked, seasoning with salt and black pepper. Once cooked, set aside.
Step 2: Cook the Cabbage and Onion
Lower the heat to medium, and add the remaining olive oil to the skillet. Sauté the yellow onion until soft and fragrant.
Add the shredded cabbage, paprika, and tomato paste. Stir well, then pour in the chicken broth and cover. Let it simmer for 20-25 minutes until the cabbage is tender.
Step 3: Combine and Simmer
Return the cooked chicken to the skillet, and add the grated carrot and cooked brown rice.
Stir everything together and simmer for an additional 5 minutes.
Step 4: Serve
