Step 2: Prepare the Stuffing
In a mixing bowl, combine the cream cheese, mozzarella, Parmesan, chopped spinach, and minced garlic. Stir until the ingredients are evenly mixed.
Stuff each chicken breast with the cheese and spinach mixture, securing the opening with toothpicks if needed.
Step 3: Grill the Chicken
Brush the chicken breasts with olive oil to prevent sticking.
Place the stuffed chicken breasts on the preheated grill. Grill for about 6-7 minutes per side, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
Step 4: Make the Cream Sauce
While the chicken is grilling, melt the butter in a saucepan over medium heat.
Add the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and garlic powder, and cook for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
If the sauce is too thick, add a splash of chicken broth or water to adjust the consistency.
Step 5: Serve
Once the chicken is cooked, remove the toothpicks and transfer the chicken breasts to plates.
Spoon the cream sauce generously over the stuffed chicken. Garnish with fresh parsley for a burst of color and freshness.
