Grilled Mediterranean Chicken Skewers: A Flavorful and Healthy Delight

In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Whisk until the marinade is smooth and well combined.
Step 2: Marinate the Chicken
Add the chicken cubes to the bowl with the marinade. Stir to coat the chicken evenly in the marinade.
Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to infuse.
Step 3: Skewer the Chicken
Preheat your grill to medium-high heat.
Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to ensure even cooking.
Step 4: Grill the Chicken
Place the skewers on the preheated grill and cook for about 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
Flip the skewers halfway through grilling to ensure the chicken is evenly cooked and gets a nice char.
Step 5: Serve
Remove the skewers from the grill and let them rest for a few minutes.
Garnish with freshly chopped parsley and serve with tzatziki sauce and a side of roasted vegetables, rice, or a fresh Greek salad.
