Preheat your grill to medium-high heat. Using kitchen scissors, carefully split the lobster tails lengthwise down the center to expose the meat. If the lobster tails are large, you can also butterfly them. Season both the lobster and shrimp with olive oil, melted butter, garlic, lemon zest, lemon juice, paprika, cayenne pepper (if using), salt, and pepper. Toss everything gently to coat evenly.
Grill the Lobster and Shrimp:
Place the lobster tails on the grill, meat side down. Grill for about 5-7 minutes, depending on the size of the tails, until the meat is opaque and slightly firm. For shrimp, place them on the grill in a grill basket or skewered, cooking for 2-3 minutes per side, until they turn pink and are cooked through.
Finish and Serve:
Remove the lobster and shrimp from the grill and let them rest for a minute. Sprinkle with fresh parsley and serve with lemon wedges for a burst of citrus. For extra flavor, drizzle some of the leftover garlic butter sauce over the top.
