Grilled Chicken Bites with Creamy Garlic Sauce

In a bowl, combine the chicken cubes, olive oil, paprika, garlic powder, salt, pepper, and onion powder (if using). Toss until the chicken is evenly coated with the spices.
Cover the bowl with plastic wrap or transfer the chicken to a resealable bag. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).
Step 2: Make the Creamy Garlic Sauce
In a small mixing bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), minced garlic, lemon juice, Dijon mustard, salt, and black pepper.
Taste and adjust seasoning if needed. Stir in the chopped parsley for freshness (optional).
Cover the sauce and refrigerate until ready to serve.
Step 3: Grill the Chicken Bites
Preheat your grill or grill pan over medium-high heat. If using wooden skewers, ensure they’ve been soaked in water to prevent burning.
Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
Lightly grease the grill grates with oil or cooking spray. Place the skewers on the grill and cook for 2-3 minutes per side, or until the chicken is golden brown, slightly charred, and cooked through (internal temperature should reach 165°F/75°C).
