Grilled Beef Skewers with Chimichurri Sauce: A Summer Classic

In a bowl, combine the chopped parsley, oregano, garlic, red wine vinegar, olive oil, and lemon juice (if using). Stir in the crushed red pepper flakes for a bit of spice.
Season the sauce with salt and pepper to taste. Let the sauce sit for at least 15 minutes to allow the flavors to meld together. For best results, let it marinate in the fridge for a couple of hours.
Prepare the Beef Skewers:

Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning.
In a bowl, toss the cubed beef with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure the beef is evenly coated with the seasoning.
Thread the seasoned beef onto the skewers, leaving a little space between each piece.
Grill the Beef Skewers:

Place the skewers on the grill and cook for 2-3 minutes per side or until your desired level of doneness is reached. For medium-rare, aim for about 5-6 minutes total grilling time. You can also use a meat thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium).
Once grilled, remove the skewers from the heat and let them rest for a couple of minutes.
Serve:

Drizzle the chimichurri sauce over the grilled beef skewers or serve it on the side as a dipping sauce. Garnish with extra parsley or a squeeze of lemon if desired.
