Green Tea, Lemon & Ginger Chews

Start by brewing 2 cups of green tea. Let it cool to room temperature.
Combine Ingredients:

In a small saucepan, add the cooled green tea, fresh lemon juice, grated ginger, and honey (or maple syrup for a vegan option).
Stir the ingredients over medium heat until well combined, and let the mixture simmer for about 5-7 minutes to allow the flavors to meld.
Add Gelatin (or Agar-Agar):

Slowly sprinkle the gelatin powder (or agar-agar) into the mixture, whisking continuously to avoid lumps. Continue to stir until the gelatin is fully dissolved and the mixture thickens slightly.
Pour into Molds:

Pour the mixture into silicone molds or a shallow baking dish if you don’t have molds.
Allow the mixture to cool to room temperature, then transfer it to the fridge to set for at least 2-3 hours or until firm.
Unmold and Serve:

Once the chews have fully set, remove them from the molds or cut them into small squares if using a baking dish.
