Greek Chicken Gyros with Cucumber Tzatziki

In a bowl, combine Greek yogurt, grated cucumber (make sure to squeeze out excess water), minced garlic, fresh dill, lemon juice, salt, and pepper. Mix until smooth and chill for 20 minutes to allow the flavors to meld.

Marinate the Chicken:
In a separate bowl, toss the chicken strips with olive oil, oregano, garlic powder, smoked paprika, salt, and pepper. Let the chicken marinate for 15 minutes to absorb the flavors.

Cook the Chicken:
Heat a skillet or grill pan over medium-high heat. Cook the chicken strips for 4-5 minutes per side until fully cooked through, with an internal temperature of 165°F (74°C). Remove from heat.

Assemble the Gyros:
Warm the pita or flatbreads in a dry skillet or microwave for a few seconds. Spread a generous amount of tzatziki sauce on each pita, then layer with the cooked chicken, diced tomatoes, red onion, and parsley.

Serve and Enjoy:
Wrap the gyros tightly, folding the edges to keep the fillings inside. Serve immediately and enjoy the fresh, zesty flavors of these homemade Greek gyros!
