Prepare the Pork Loin Rolls:
Lay the pork loin steaks flat on a clean surface. Season with salt, pepper, and dried oregano on both sides. Set aside.
Prepare the Filling:
Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant (about 3-4 minutes). Add the chopped spinach and sun-dried tomatoes, sautéing for another 2 minutes. Remove from heat and allow to cool slightly.
Assemble the Rolls:
In a small bowl, combine the fresh breadcrumbs and grated Parmesan cheese. Add the sautéed mixture to the bowl, mixing it all together until evenly combined. Spoon the filling onto the center of each pork loin steak, then roll up tightly and secure with toothpicks or kitchen twine.
Gratinate the Rolls:
Preheat your oven to 375°F (190°C). Grease a baking dish with butter. Place the pork rolls in the dish, ensuring they fit snugly. Sprinkle the shredded mozzarella cheese evenly over the top of the rolls.
Bake:
Place the dish in the oven and bake for 25-30 minutes, or until the pork is cooked through (internal temperature should reach 145°F/63°C) and the cheese is golden and bubbling.
Serve:
Remove the toothpicks or kitchen twine from the rolls. Serve the gratinated pork loin rolls with your favorite side dish, such as roasted vegetables, mashed potatoes, or a crisp salad.
