In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon (if using).
In a separate bowl, beat the eggs, milk, melted butter, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms. The dough should be slightly sticky but firm enough to hold its shape.
Step 2: Roll and Cut the Doughnuts
Turn the dough out onto a lightly floured surface. Roll it out to about 1/2-inch thickness.
Using a doughnut cutter or two round cookie cutters (one large and one small for the hole), cut out the doughnut shapes. Set the doughnuts aside on a floured baking sheet or tray.
Step 3: Fry the Doughnuts
Heat about 3 inches of vegetable oil in a deep pan or fryer to 350°F (175°C).
Carefully lower the doughnuts into the hot oil, a few at a time, being careful not to overcrowd the pan. Fry the doughnuts for about 1-2 minutes per side, or until they are golden brown.
Use a slotted spoon to remove the doughnuts from the oil and transfer them to a paper towel-lined plate to drain excess oil.
Step 4: Coat the Doughnuts
While the doughnuts are still warm, mix together the powdered sugar and cinnamon (if using) in a shallow bowl.
Roll each doughnut in the sugar mixture, coating it evenly. You can also dip them in chocolate glaze or a simple sugar glaze if you prefer.
Step 5: Serve and Enjoy
Once coated, the doughnuts are ready to enjoy! Serve them fresh and warm, and share with family and friends.
