Grandmother’s Vegetable Soup Recipe

Prepare the Vegetables: Wash and chop all the vegetables as described (onion, celery, carrot, peppers, and zucchini). Mince the garlic.

Saute the Onion: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 2-3 minutes until softened.

Add the Garlic and Vegetables: Stir in the minced garlic, then add the celery, carrot, sweet red pepper, sweet orange pepper, and zucchini to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.

Add the Broth and Seasonings: Pour in the vegetable broth (or water) and bring the mixture to a boil. Once boiling, lower the heat and let it simmer for 20-30 minutes, or until all the vegetables are tender.

Season: Season the soup with salt, pepper, and any herbs you like. Fresh thyme, parsley, or even a bay leaf can be a great addition.

Serve: Once the soup is ready, serve hot. You can add a drizzle of olive oil on top for extra richness if desired.
