Golden Cheesy Mashed Potato Bites

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

Prepare the Mixture: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped green onions, beaten egg, breadcrumbs, and a pinch of salt and pepper. Mix well until all ingredients are thoroughly combined.

Form the Bites: Scoop out about a tablespoon of the potato mixture and roll it into a ball. Place each ball onto the prepared baking sheet. Continue forming the bites until all the mixture is used up.

Bake: Lightly drizzle or spray the potato bites with a bit of olive oil to help them crisp up in the oven. Bake for 20-25 minutes, or until the potato bites are golden brown and crispy on the outside.

Serve: Remove from the oven and allow them to cool slightly before serving. These cheesy bites are perfect on their own or served with a dipping sauce like ranch, sour cream, or even ketchup.
