Glazed Roasted Pork with Tender Interior: A Perfectly Roasted Pork with a Sweet and Savory Glaze

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a roasting pan with parchment paper or lightly grease it.
Prepare the Pork: Pat the pork shoulder or ham dry with paper towels. Rub the entire surface with olive oil, then season generously with salt and pepper. Sprinkle the minced garlic, fresh thyme, and rosemary over the pork, pressing gently to adhere.
Roast the Pork: Place the pork in the prepared roasting pan and roast for about 2.5 to 3 hours (or longer for a bone-in cut), or until the internal temperature reaches 190°F (88°C) for the perfect tender interior. If you’re using a boneless cut, it will cook a bit quicker, so start checking the temperature around 2 hours.
Make the Glaze: While the pork is roasting, combine the brown sugar, Dijon mustard, apple cider vinegar, soy sauce, cinnamon, and ground cloves in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Once the glaze thickens and becomes syrupy (about 5-7 minutes), remove from heat and set aside.
Glaze the Pork: About 20 minutes before the pork is done, brush a generous amount of the glaze over the pork. Continue roasting, basting the pork with the glaze every 5-10 minutes, until the exterior is golden and caramelized.
Rest the Pork: Once the pork is done, remove it from the oven and let it rest for 10-15 minutes before slicing. This will allow the juices to redistribute for a moist, tender roast.
Serve: Slice the pork and serve it with the remaining glaze on the side. Enjoy with roasted vegetables or mashed potatoes for a complete meal!
