During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
Step 2: Prepare the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Drain on paper towels.
Step 3: Assemble the Burger
Toast the brioche buns lightly on the grill or in the skillet until golden. On the bottom bun, place one patty, then add a slice of crispy bacon and a few pickles. Repeat with the second patty, another slice of bacon, and more pickles. Spread ketchup and mustard on the top bun, then close the burger.
