Rinse the ribs and pat them dry with a paper towel.
Cut the ribs into individual pieces or smaller sections for easier cooking and serving.
Marinate the Ribs:
In a large bowl, mix the soy sauce, honey (or sugar), rice vinegar, oyster sauce, sesame oil, black pepper, and half of the minced garlic.
Add the ribs to the marinade, making sure they’re well-coated. Let them marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
Cook the Ribs:
Heat a large skillet or frying pan over medium-high heat. Add the vegetable oil.
Add the marinated ribs to the pan (reserve the marinade) and sear them for about 2-3 minutes on each side until they’re nicely browned.
Add Garlic and Sauce:
Lower the heat to medium and add the remaining minced garlic to the pan. Stir for about 1 minute until the garlic becomes fragrant.
Pour in the reserved marinade and a splash of water to loosen the sauce. Cover the pan with a lid and simmer the ribs for 20-25 minutes, turning occasionally. Add more water as needed to prevent burning.
Caramelize the Sauce:
Once the ribs are tender and fully cooked, remove the lid and allow the sauce to thicken. Increase the heat slightly, allowing the sauce to become sticky and coat the ribs.
Serve:
Garnish the ribs with chopped parsley or green onions for a fresh pop of color.
Serve hot with steamed rice, noodles, or a side of vegetables.
