Using kitchen shears, cut along the top of the lobster tail shell lengthwise, stopping just before the tail fin. Gently pull apart the shell and lift the lobster meat, keeping it attached at the base. Rest the meat on top of the shell for easy grilling. Pat the meat dry with paper towels.
Make the Garlic Herb Butter:
In a small bowl, whisk together the melted butter, garlic, parsley, thyme, lemon zest, lemon juice, salt, and black pepper.
Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grill grates to prevent sticking.
Grill the Lobster:
Place the lobster tails meat-side up on the grill. Brush generously with the garlic herb butter. Close the grill lid and cook for 5-7 minutes, or until the lobster meat is opaque and slightly firm to the touch. Baste with more garlic herb butter halfway through cooking for extra flavor.
Serve:
Remove the lobster tails from the grill and drizzle with any remaining garlic herb butter. Serve hot with lemon wedges for squeezing over the top.
