Funnel Cake Bites: Mini Sweet Treats with a Fun Twist

In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
In a separate bowl, beat the egg, milk, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth and thick enough to hold its shape.
Heat the Oil:

In a deep frying pan or large pot, heat about 2 inches of vegetable oil over medium heat to 375°F (190°C). You can test the oil temperature by dropping a small spoonful of batter into the oil—if it bubbles and rises to the surface immediately, the oil is ready.
Fry the Funnel Cake Bites:

Use a spoon or small cookie scoop to drop spoonfuls of batter into the hot oil. Fry in batches, being careful not to overcrowd the pan.
Fry the bites for 1-2 minutes, turning them halfway through, until they are golden brown and crispy. Remove them from the oil using a slotted spoon and drain on paper towels.

Once all the funnel cake bites are fried, dust them generously with powdered sugar. Serve warm and enjoy the sweet, crispy goodness!
