Fluffy Buttermilk Pancakes

Prepare the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

Mix the Wet Ingredients:
In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.

Combine the Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or whisk until just combined. Be careful not to overmix—it’s okay if there are a few lumps. Overmixing can make the pancakes dense.

Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Once the skillet is hot, pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges begin to look set, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.

Serve:
Remove the pancakes from the skillet and serve hot with your favorite toppings—maple syrup, fresh fruit, whipped cream, or a dusting of powdered sugar.
